Eggplant Dip (Mutabbal Batinjan)

This creamy eggplant dip with tahini and yogurt is commonly mistaken for Baba Ghanouj, another eggplant-based Middle Eastern dip.  Baba Ghanouj does not have tahini or Yogurt, but instead a variety of fresh veggies, like green bell pepper, tomato, green onion, and parsley.
