Mastic is a resin obtained from the mastic tree . Also known as “Arabic Gum” and “Tears of Chios”, the earliest use of mastic was chewing gum. In Lebanon its used to make cheeses, sweets, ice cream and in sauces. In other countries its used to make Turkish delight, cakes, soft drinks, breads and liquors. This particular mastic comes from a tree that grows on the south side of a particular Greek Island. This is a very high quality mastic, beware of imitations that come from pine or almond trees.
